We are excited to announce two very interesting keynote speakers:
- Dr. Julia K. Keppler is Associate Professor at the Laboratory of Food Process Engineering of Wageningen University & Research (WUR). Her research focuses on the targeted functionalization of proteins during extraction or processing in foods, encompassing dairy, plant, insect, mussel, and single cell proteins with an overall goal to identify favorable protein sources (or mixtures of various sources) and processing conditions for producing meat and dairy alternatives of the future.
- Dr João Garcia is a Research Fellow at the European Space Agency (ESA) and working on a project looking into one of the biggest barriers to long-distance space travel: cultivating meat in space. The project will culminate in a set of recommendations for ESA, and may be followed by recommendations for follow-up studies on the development of space-based meat cultivation.
